Pasta is one of my favorite dishes to eat and cook. Whether you’re choosing a meal for date-night or simply selecting a family-friendly meal, pasta is great choice of dish. One of the great hallmarks of pasta is that there are so many different ingredients one can add to their pasta for variety.

I’ve chosen to spice up the traditional fettuccine with shrimp recipe by incorporating grilled zucchini to the recipe to give it a Mediterranean feel.

Serves 3


1 pound of medium-sized shrimp

2 medium-sized zucchini

Fettuccine pasta

2 tbsp of olive oil

2 tbsp of butter

1tbsp of garlic (chopped)

Ground Pepper


Grated Parmesan

Fresh Lemon


Boil your pasta with water and added salt for 10 minutes. Next, simply peel your shrimp. Chop zucchini into 1/2 inch thick pieces.

After pasta is finished cooking, drain your pasta. To ensure your pasta remains it’s moisture, leave about a quarter of your water left.

Place skillet on medium heat. Add in your peeled shrimp, chopped zucchini and butter. Sprinkle garlic, salt, and pepper over shrimp and zucchini. Cook and stir ingredients on high heat for about 2-3 minutes. Your zucchini should start to darken in shade when it’s finished.

Add your pasta into a larger skillet on medium heat. Toss your shrimp and zucchini into the skillet while stirring pasta. Make sure ingredients are evenly distributed into fettuccine pasta. Serve hot with parmesan sprinkled over top.
